Meet Zach Chillman, Commissary Manager

Giving Egg Harbor Cafe guests the high quality, great tasting foods that they want is at the heart of everything that Zach Chillman does. From behind the scenes where he heads up Chicago-area commissary operations, Zach plays a central role helping each location bring its guests a consistently excellent experience.

Although every day is different, Zach spends much time testing recipes, overseeing the commissary kitchen, fulfilling restaurants’ orders and working on equipment repair. He loves being part of Egg Harbor Café’s mission to create house-made foods with clean, flavorful ingredients. In helping to bring our tomato bisque in-house, for example, Zach worked with the menu team, experimenting with several recipes before coming up with a tomato bisque that is vegetarian, gluten-free and, of course, great-tasting.

When he is not working, Zach stays busy with his wife Angelique, an Egg Harbor regional manager, their daughter Finley (2-1/2 years) and their son Everett (1-1/2 years). When asked who he admires most, Zach doesn’t hesitate: “My wife, Angelique. She is incredibly skilled, immensely invested in both our family and Egg Harbor Café.” At home and on the job, Zach also tries to make the most out of each day of his life’s journey: “It’s the sides of the mountain which sustain life, not the top,” he says (quoting Zen and the Art of Motorcycle Maintenance).
